How to make keto microwave mug cheesecake
- Put the cream cheese into a small microwave-safe bowl and heat it up for 15-30 seconds until it is nice and soft. (You can skip this step if your cream cheese is already softened by being at room temp for at least 30 minutes)
- Whisk in vanilla, sweetener and 1 egg. Make sure everything is combined and there are no lumps!
- Pour the mixture into small microwave-safe mugs or a ramekin that’s been lightly sprayed with cooking spray or butter. The cake will rise just a bit so make sure it’s not filled to the brim.
- Microwave for 90 seconds while checking on it every 30 seconds. The cooking time depends on your microwave.
- To make sure the keto microwave mug cheesecake is fully cooked through, stick a toothpick into it and if the pick comes out clean, it’s done.
- Let the cheesecake rest in a fridge for at least 10 minutes before eating. The longer the chilling time, the less likely it is to taste eggy.

If you don’t own a microwave or prefer to use an oven you can make this crustless cheesecake in the oven instead.
Simply preheat your oven to 320 F (160 C) and once the oven is preheated, pop in your oven safe ramekins with the cheesecake mix and bake for 10-12 minutes until it’s set but the centre is a little bit jiggly.

To make a simple almond flour crust, combine 2 tbsp of almond flour, 1 tsp sweetener and 1 tsp melted butter. Then press the mixture into the bottom of your greased ramekin and add the cheesecake filling mixture on top.

The cheesecake will actually taste better after it has cooled down and even better the next day. It will last in an airtight container in your fridge for up to 2 days.

I made this and the taste was excellent. The presentation however was not! I cooked it in a regular sized mug (approx 300ml) and when it come out it did not keep the shape, top or bottom. Will try in ramekins next time.
I cooked it in the same mug (large) one I prepared it in. I cooked it a further 30 seconds than indicated. It came out perfect. I served it with a strawberry coulis I had prepared earlier in the week. Delish!!!!
This recipe turned out to be a much more authentic tasting “cheesecake” than I was expecting. After microwaving, kept in fridge for a little over an hour to ensure its overall coolness. Popped right out of the mug and I topped it with Raspberry’s, delicious!
