Here’s everything you will need to make the lemon cream cheese mug cake:
- cream cheese – let the cream cheese sit at room temperature for at least 30 minutes before making this recipe to soften it or alternatively, microwave it for 20 seconds to make it softer and easier to blend.
- sweetener – use any keto friendly sweetener you like.
- lemon juice – either freshly squeezed or bottled lemon juice.
- lemon zest- you can skip this ingredient if you don’t have fresh lemons at hand but it is highly recommended.
- almond flour
- egg

How to make keto microwave lemon cheesecake:
Step 1: Take a microwave safe mug and add softened cream cheese, sweetener, lemon juice, zest, almond flour and an egg and mix until combined.
Step 2: Once there are no lumps remaining, place the mug into your microwave and microwave for 70-90 seconds until fully cooked.
Step 3: Take the mug cheesecake out of the microwave and let it rest for 10 minutes to set. Top with some keto ice cream, whipped cream or a keto lemon glaze.
To make the lemon glaze: Mix 1 tbsp powdered sweetener with 1 tsp lemon juice.
