Keto coconut flour pancakes shopping list:

- Eggs
- Thickened cream

How to make the low carb coconut flour pancakes:
- In a medium-size bowl, whisk the eggs up with a pinch of salt.
- In a different bowl, mix together coconut flour, baking powder & the sweetener.
- Add melted butter, thickened cream and vanilla essence to the eggs mix.
- Combine the dry ingredients into the wet ones and mix them all together.
- Let the mixture rest for at least 10 minutes until little air bubbles start to form on top, this also lets the pancake mix thicken up.
- Heat up a pan over low-medium heat and grease it with butter or coconut oil.
- Fry the coconut flour pancakes for 1-2 minutes on each side and set aside on a place once cooked. Makes about 10 3-inch pancakes (Serves 2 people)

- 3 tbsp coconut flour
- 1 tbsp erythritol sweetener
- 1/2 tsp baking powder
- 2 eggs
- 2 tbsp thickened cream
- 1 tbsp melted butter
- 1/2 tsp vanilla essence (optional)
- pinch of salt (optional)
Instructions
- In a medium-size bowl, whisk the eggs up with a pinch of salt.
- In a different bowl, mix together coconut flour, baking powder & the sweetener.
- Add melted butter, thickened cream and vanilla essence to the eggs mix.
- Combine the dry ingredients into the wet ones and mix them all together.
- Let the mixture rest for at least 10 minutes until little air bubbles start to form on top, this also lets the pancake mix thicken up.

Notes
Tips to make the best keto coconut flour pancakes:
Before you pour the batter onto the pan, sprinkle a tiny bit of water on it to make sure the pan is hot enough. If the water makes the pan sizzle it's hot enough to start cooking.
Keep the heat of your pan low-medium side, you don't want them to cook too fast as they can dry out.
Keep the size on the pancakes on the smaller side (about 3 inches diameter) so they are easier to flip.
