Is vanilla Keto-friendly?
Pure vanilla extra is ok for keto in small doses. Make sure you don’t use imitation vanilla as that has tons of added ingredients that can mess with ketosis.
If you want to be extra safe, use pure vanilla beans as they are the purest form of vanilla and you only need a tiny bit to add tons of flavor.

Cream cheese is totally fine for the keto diet. It’s a great source of fats and a 1 oz serving of cream cheese contains just 0.75 g net carbs and 10 grams of fat.

- Coconut flour – I use this one as it’s organic and the lowest net carb coconut flour I’ve found.
- Sweetener – You can use any sweetener you have that measures like sugar, I use granulated Erythritol.
- Vanilla extract
- Baking powder
- Egg – Use a large egg that’s at room temperature for easier mixing.
How to make keto microwave cake in a mug
- Microwave cream cheese for about 20 seconds until it’s slightly softened.
- In a small bowl, crack an egg and whisk it for a few seconds until it’s slightly fluffy.
- Add in cream cheese and vanilla extract.
- Mix in the dry ingredients (coconut flour, sweetener and baking powder)
- Take a small greased microwave-safe ramekin or a mug and pour the mixture into it.
- Microwave for 60 seconds until fully cooked.
- Serve while still hot.

- 1 oz cream cheese
- 1 tbsp coconut flour
- 1 tbsp sweetener, I used Erythritol
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
- 1 large egg
Instructions
- Microwave cream cheese for about 20 seconds until it's slightly softened.
- In a small bowl, crack an egg and whisk it for a few seconds until it's slightly fluffy.
- Add in cream cheese and vanilla extract.
- Mix in the dry ingredients (coconut flour, sweetener and baking powder)

Notes
This keto microwave cake tastes great topped with some sugar free whipped cream or keto ice cream and fresh berries or with some keto berry jam.
Depending on your microwave, you may need to cook it for an extra 20-30 seconds. The best way to check if it's cooked is to poke a toothpick in the middle of the cake and it it comes out clean, it's ready to eat.
You can add some frozen berries like raspberries, strawberries, or blueberries into the batter for a keto vanilla berry mug cake.

Best Keto mug cake I’ve had! My bf loved it too, said it tasted and had the moist texture of real cake. I often find coconut flour to be too dry, so I used 1/2 coconut, 1/2 almond flour. Doubled the recipe, for two cakes, and topped with fresh raspberries. Delish!
