How to make easy slow cooker chicken thigh recipes

  1. Mix together paprika, thyme, salt, and pepper. 
  2. Wash the chicken thigh cutlets under cold running water and pat dry with a paper towel. Cover them in the dry spice rub.
  3. Heat the oil in a pan over high heat. Add in the marinated chicken thighs with skin side down and cook for 6 minutes on each side until browned and crispy. Add them right into the crockpot with skin side up.
  4. Lower the pan to medium and cook the crushed garlic for 2 minutes until fragrant. Add garlic to your crockpot.
  5. Add in 1 cup of water, freshly grated lemon zest and lemon juice and set it to cook on low for 4-6 hours.

 

To make a quick pan sauce, keep the pan juices from frying the chicken and add 1 tbsp of butter and 1/2 cup of thickened cream to it and simmer for 5 minutes until it thickens slightly. Season with salt & pepper to taste. Serve over the cooked chicken thighs.

  • 4 chicken thighs bone-in, skin-on (cutlets)
  • 1 tsp paprika
  • 1 tsp thyme

Notes

Do not cook the chicken thighs on high as they will dry out.

If you want to add a bit of extra flavor, swap the water out for chicken stock. Note that this will increase the carb count.
