Coconut is a keto-friendly food because it includes a moderate amount of carbs and protein and a high fat content. It’s naturally low in carbs and high in fat, which is ideal for the keto diet.
Why are my coconut macaroons dry?
Overbaking may result in dry coconut macaroons. That is why I suggest keeping to the recommended baking times and take them out when they are just slightly undercooked as they will continue cooking even when out of the oven.

Keto coconut cookies with condensed milk shopping list
Here’s everything you will need to make the macaroons:
- keto condensed milk
- 1 large egg white
- 3 cups of unsweetened coconut flakes
How to make keto condensed milk:
To make sugar-free condensed milk, all you need is 1 cup of heavy cream, 2 tbsp of butter and 1/2 cup of sweetener.
Add all of the ingredients into a heavy-bottomed saucepan bring to simmer. Then let it simmer on low heat for about 30 minutes until it is fragrant and slightly yellow in color. Store in a sealed container in your fridge for up to 3 days.

Keto Coconut Macaroons With Condensed Milk (3-Ingredient Recipe)
Delicious gluten-free, sugar-free, low carb and keto coconut macaroons made with condensed milk, shredded coconut and egg whites.
Ingredients
- 2/3 cup of keto condensed milk (recipe above)
- 1 large egg white at room temperature
- 3 cups of unsweetened shredded coconut
Instructions
- Preheat oven to 320°F (160°C). Line a baking sheet with non stick parchment paper.
- Mix together the shredded coconut, keto condensed milk and egg white.
- Scoop out about 1.5 tbsp size of cookie dough and form little balls between your hands. Place on the cookie sheet.
- Bake for 15-20 minutes until the coconut macaroons are golden.
- Transfer to a wire rack and let them cool.
- Serve and enjoy 🙂
Notes
If you prefer your macaroons to be sweeter, increase the amount of sweetener used.
If the dough is too wet to make balls of cookies, add slightly more shredded coconut.
Drizzle melted chocolate over the keto coconut macaroons after they've finished baking for a tasty twist on these coconut cookies.
